Saffron Rice – Zafrani Pulao Recipe Ingredients
- Mutton … 1 kg
- Rice … 1 kg
- Oil … 1 Cup
- Onion … 2 Cups Sliced
- Ginger Garlic Paste … 2 tbsp
- Salt … 1 tbsp
- Chili Powder … ½ tbsp
- Green Chilies … 15
- Tomatoes … 2
- Black Cardamom … 2
- Black Pepper … 1 tsp
- Cinnamon … 2 Sticks
- Cloves … 1 tsp
- White Cumin Seeds … 1 tsp
- Aalo Bukhara … 10
- Saffron Essence … ½ tsp Mixed with ¼ Cup Milk
Saffron Rice – Zafrani Pulao Recipe Cooking Steps
Put into a cooking pot; 4 cup water, mutton, whole green chilies, ginger garlic paste, red chili powder, salt, cumin, cloves, cinnamon sticks, black peppercorns, black cardamom and place over flame.
Also add pre-soaked plums into the mutton and let the mutton be cooked over low flame for half an hour.
Add chopped tomatoes into the mutton and fry until the mutton is almost done.
Heat cooking oil into a separate pot and golden fry onion into it.
Add ¼ cup of water into the fried onion and then fry mutton into it.
When the mutton is fried; add 3 cup water and bring to boil; add pre-soaked rice.
Cook rice for 10 minutes until water evaporates.
Cook the rice over very low flame after the water is evaporated so that the rice may get fully done.
Finally mix saffron mixed milk into the rice and remove from hearth; enjoy.
