Indian Rogan Josh Recipe Ingredients

  • Mutton ( Cut into Cube Size Pieces ) … 1 kg
  • Oil … 1 Cup
  • Fennel Powder or Saunf Powder … 3 tsp
  • Red Chilli Powder … 3 tsp
  • Ginger Powder … 2 tsp
  • Cumin Powder … 2 tsp
  • Small Cardamom … 4
  • Large Cardamom ( Ground into Powder ) … 3 tsp
  • Asafoetida or Heeng Powder … 1 tsp
  • Cinammon Sticks … 2
  • Bay Leaf … 2
  • Cloves … 2
  • Yoghurt … 1 Cup
  • Salt … 1 tsp
  • Saffron … 1/3 tsp

Indian Rogan Josh Recipe Cooking Steps

  1. Heat oil in a pressure cooker and add the cinnamon, bay leaves, green cardamom and cloves.
  2. Once the whole spices start to crack, add the meat, salt and asafoetida. Fry meat till it turns brown.
  3. Now add a cup of water and let it cook for 20 minutes.
  4. Add the red chili powder and saffron into the meat. Cook for another 10 minutes.
  5. Pour the yoghurt in the pressure cooker and stir till you get a reddish color.
  6. Next add 2 cups of water, fennel powder and ginger powder. Simmer for 5 minutes.
  7. Lastly sprinkle cumin powder and cardamom powder.
  8. Serve hot with naan or tandoor roti.
